Description

Indulge in these decadent Sno Ball Brownies that combine the fudgy goodness of brownies with a fluffy marshmallow and coconut topping, reminiscent of the iconic snack cake.

Ingredients

Scale

Brownies:

  • 1 box brownie mix (plus ingredients listed on box, usually eggs, oil, and water)

Marshmallow Coconut Topping:

  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut
  • ½ cup granulated sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ½ teaspoon vanilla extract
  • red or pink food coloring (optional, for classic Sno Ball color)
  • pinch of salt

Instructions

  1. Prepare Brownies: Preheat the oven and prepare the brownie batter according to the package instructions. Pour into a greased or parchment-lined 9×13-inch baking dish and bake as directed.
  2. Make Marshmallow Topping: In a saucepan over medium heat, combine sugar, corn syrup, water, and salt. Stir until sugar is dissolved, then bring to a boil. Continue cooking until the mixture reaches 240°F on a candy thermometer. Remove from heat, stir in vanilla and food coloring. Mix in mini marshmallows until smooth.
  3. Assemble: Pour marshmallow mixture over warm brownies. Sprinkle coconut on top, press gently to adhere. Cool completely before cutting into squares.

Notes

  • For a festive touch, tint coconut pink before sprinkling.
  • Best enjoyed within 2 days and stored in an airtight container at room temperature.
