Description

These Snowball Cookies are a classic holiday treat, also known as Mexican Wedding Cookies or Russian Tea Cakes. Butter, sugar, and nuts come together to create these delicate, melt-in-your-mouth cookies that are perfect for festive occasions.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for rolling)
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans or walnuts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the dough: In a large bowl, beat the softened butter and 1/2 cup powdered sugar until light and creamy. Mix in the vanilla extract. Add the flour and salt, and stir until just combined. Fold in the chopped nuts.
  3. Shape and bake: Roll the dough into 1-inch balls and place them 1 inch apart on the prepared baking sheet. Bake for 12–14 minutes, or until the bottoms are lightly golden.
  4. Coat with sugar: Let cookies cool for 5 minutes, then roll in powdered sugar while still warm. Cool completely, then roll in powdered sugar again for a snowy finish.

  • For a nut-free version, omit the nuts and add 1/2 teaspoon almond extract for flavor.
