- 1/4 cup finely chopped green bell pepper
- 1/2 cup cornmeal

- 1 large egg
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1–2 tablespoons milk (if needed for moisture)
- 1/4 cup vegetable oil (for frying)
Instructions
- Prepare the Salmon Mixture: In a medium bowl, combine the salmon, onion, bell pepper, cornmeal, flour, egg, mayonnaise, mustard, garlic powder, onion powder, cayenne (if using), salt, pepper, and parsley. Mix until well combined. Add milk if needed for moisture.
- Shape and Fry the Patties: Shape the mixture into 6–8 patties. Heat vegetable oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side until golden brown and cooked through. Drain on a paper towel-lined plate.
- Serve: Serve hot and enjoy!

- You can substitute canned mackerel or leftover cooked salmon for variation.
