Puff Pastry Swirls:

  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten with 1 tablespoon water for egg wash

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Sauté onion and garlic: In a skillet over medium heat, warm the olive oil and sauté the onion until soft and translucent, about 5 minutes. Add garlic and cook for 1 minute more. Remove from heat and let cool slightly.
  3. Prepare filling: In a large bowl, combine the spinach, feta, ricotta, Parmesan, sautéed onion mixture, egg, dill, salt, and pepper.
  4. Assemble swirls: Unroll one puff pastry sheet on a lightly floured surface. Spread half of the spinach mixture evenly over the pastry, leaving a 1-inch border along one edge. Roll the pastry up tightly into a log and pinch the seam to seal. Slice into 1-inch pieces and place swirl-side up on the baking sheet. Repeat with the second pastry sheet.
  5. Bake: Brush the tops with egg wash. Bake for 18 to 22 minutes, or until golden brown and puffed. Cool slightly before serving warm.

Notes

  • For extra crispiness, bake on the lower rack of the oven for the first 10 minutes.
  • These swirls can be assembled ahead and frozen unbaked; bake straight from frozen, adding 5 minutes to the baking time.
