For the salmon:

  • 4 salmon fillets (skin-on or skinless)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

For the potatoes:

  • 1 1/2 pounds baby potatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

For the asparagus:

  • 1 bunch asparagus (trimmed)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded mozzarella or Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the halved baby potatoes with olive oil, garlic powder, parsley, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
  2. Season salmon fillets. After 15 minutes, remove the baking sheet, add salmon fillets, and return to the oven for 10 minutes.
  3. Toss asparagus and add to the sheet pan. Bake everything for an additional 8–10 minutes until cooked through. Serve hot.
