Beef Filling:

  • 1 tablespoon olive oil
  • 1/2 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 pound ground beef
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup salsa
  • 1 cup shredded cheddar or pepper jack cheese

Other:

  • 12 small corn tortillas
  • Vegetable oil for frying

Instructions

  1. Prepare Beef Filling: Heat olive oil, sauté onion, add garlic, cook ground beef, add tomato paste, spices, salsa, and cheese.
  2. Assemble Taquitos: Warm tortillas, spoon beef mixture onto each, roll tightly, secure with toothpick if needed.
  3. Fry Taquitos: Heat vegetable oil, fry taquitos in batches until golden and crispy.

Notes

  • For a healthier version, bake the taquitos at 425°F (218°C) for 18–20 minutes, brushing lightly with oil.
  • Serve with sour cream, guacamole, or salsa for dipping.
