- 1 (15 oz) can chickpeas, drained and rinsed
- ¼ cup finely chopped red onion
- 2 cloves garlic, minced
- 1 small jalapeño, seeded and minced
- ¼ cup chopped fresh cilantro or parsley

- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste

- 1 egg
- ½ cup breadcrumbs (regular or gluten-free)
- 1 tablespoon lemon juice
- 1–2 tablespoons olive oil (for frying)
Instructions
- Pulse Chickpeas: In a food processor, pulse chickpeas until mostly broken down but still slightly chunky. Transfer to a bowl.
- Mix Ingredients: Add red onion, garlic, jalapeño, cilantro, cumin, paprika, cayenne, salt, pepper, egg, breadcrumbs, and lemon juice. Stir until well combined. Let sit for 5–10 minutes.
- Form Patties: Shape the mixture into 6–8 small patties. Cook in olive oil in a skillet over medium heat for 3–4 minutes per side until golden brown and crisp.
- Serve: Enjoy warm with yogurt sauce, hummus, or in a pita with veggies.
Notes
- For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flax + 3 tablespoons water).
- These patties also bake well—place on a greased baking sheet and bake at 400°F for 20–25 minutes, flipping halfway.
