  • 1 (15 oz) can chickpeas, drained and rinsed
  • ¼ cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and minced
  • ¼ cup chopped fresh cilantro or parsley

Seasonings

  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Binding and Cooking

  • 1 egg
  • ½ cup breadcrumbs (regular or gluten-free)
  • 1 tablespoon lemon juice
  • 1–2 tablespoons olive oil (for frying)

Instructions

  1. Pulse Chickpeas: In a food processor, pulse chickpeas until mostly broken down but still slightly chunky. Transfer to a bowl.
  2. Mix Ingredients: Add red onion, garlic, jalapeño, cilantro, cumin, paprika, cayenne, salt, pepper, egg, breadcrumbs, and lemon juice. Stir until well combined. Let sit for 5–10 minutes.
  3. Form Patties: Shape the mixture into 6–8 small patties. Cook in olive oil in a skillet over medium heat for 3–4 minutes per side until golden brown and crisp.
  4. Serve: Enjoy warm with yogurt sauce, hummus, or in a pita with veggies.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flax + 3 tablespoons water).
  • These patties also bake well—place on a greased baking sheet and bake at 400°F for 20–25 minutes, flipping halfway.
