Instructions
- Prepare Egg Mixture: In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- Cook Eggs: Heat a non-stick skillet over medium heat, add butter. Once melted, pour in the egg mixture, tilt pan to spread evenly. Cook undisturbed for 1-2 minutes until edges set. Lift edges with spatula to let uncooked egg flow underneath.
- Add Fillings: Sprinkle spinach over half the omelette, top with cheese. Cook for another 1-2 minutes until cheese melts and omelette is mostly set but still moist on top.
- Finish and Serve: Fold omelette in half, slide onto plate. Garnish with chives or parsley, if desired. Serve hot.
