Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken later.
- Sear Chicken: Heat olive oil in a skillet over medium heat, season the chicken breasts with salt and pepper, then cook them for 5-7 minutes on each side until they develop a golden brown crust.
- Sauté Vegetables: Remove the chicken and set aside. In the same skillet, add minced garlic, fresh spinach, and sliced mushrooms. Sauté until the spinach wilts and mushrooms soften, releasing their flavor.
- Make Cream Sauce: Stir in the cream and half of the shredded cheese into the skillet mixture, mixing well to create a creamy sauce that coats the vegetables.
- Bake Chicken: Place the seared chicken breasts in a baking dish, pour the creamy spinach and mushroom mixture over them, then top with the remaining cheese. Bake in the preheated oven for 25-30 minutes until the chicken is fully cooked and the cheese is melted and bubbly.
