Cauliflower Batter and Coating
- 1 large head of cauliflower, cut into bite-sized florets
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup panko breadcrumbs
Sticky Sesame Sauce
- 1/3 cup soy sauce
- 1/3 cup maple syrup or honey
- 1/4 cup rice vinegar
- 2 tablespoons sesame oil
- 2 tablespoons ketchup
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 1 tablespoon sesame seeds
Garnish
- Sliced green onions
- Additional sesame seeds
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Prepare Cauliflower Batter: In a mixing bowl, combine the all-purpose flour, water, garlic powder, onion powder, salt, and black pepper to create a smooth batter.
- Coat Cauliflower: Dip each cauliflower floret into the batter, ensuring it is fully coated, then roll it in the panko breadcrumbs to cover evenly. Arrange the coated florets in a single layer on the prepared baking sheet.
- Bake Cauliflower: Bake the cauliflower in the preheated oven for 20-25 minutes, or until the florets are golden brown and crispy on the outside.
- Make Sticky Sesame Sauce: While the cauliflower bakes, combine the soy sauce, maple syrup or honey, rice vinegar, sesame oil, ketchup, minced garlic, minced ginger, and red pepper flakes (if using) in a saucepan over medium heat. Bring to a gentle simmer.
- Thicken Sauce: Stir the cornstarch slurry into the simmering sauce and cook for a few more minutes until the sauce thickens to a glossy, sticky consistency. Stir in the sesame seeds at the end.
- Toss Cauliflower in Sauce: Once the cauliflower is baked and crispy, transfer it to a large bowl and toss gently with the sticky sesame sauce to coat each piece thoroughly.
- Garnish and Serve: Garnish the sticky sesame cauliflower with sliced green onions and additional sesame seeds before serving immediately for the best texture and flavor.
Notes
- You can substitute maple syrup with honey if not vegan.
- For extra spice, increase red pepper flakes to your taste.
- Ensure cauliflower florets are dry to help the batter adhere better.
- If you prefer a gluten-free version, replace all-purpose flour and panko with gluten-free alternatives.
- Serve with steamed rice or as a plant-based appetizer for a crowd-pleaser.
