Description
A refreshing and creamy homemade strawberry almond milk recipe that combines soaked raw almonds with fresh strawberries, sweetened naturally with maple syrup or honey. Perfect as a dairy-free, vegan, and gluten-free beverage that can be enjoyed chilled.
Ingredients
Scale
Almond Milk Base
- 2 cups raw almonds, soaked overnight and drained
- 4 cups filtered water, plus more for soaking
Flavoring
- 1 cup fresh strawberries, hulled and sliced
- 2 to 3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Soak Almonds: Soak the almonds in enough water to cover them by at least 2 inches and let them sit overnight or for at least 8 hours. This softens the almonds for easier blending and improves digestibility. After soaking, drain and rinse the almonds thoroughly.
- Blend Almonds and Water: Add the soaked almonds and 4 cups of fresh filtered water to a high-speed blender. Blend on high for 1 to 2 minutes until the mixture looks creamy and the almonds are finely broken down, creating the base almond milk.
- Strain Almond Milk: Place a nut milk bag or a fine mesh strainer over a large bowl. Pour the blended mixture through it, squeezing or pressing to extract as much liquid as possible. Discard or save the leftover almond pulp for another use.
- Flavor the Milk: Return the strained almond milk to the blender. Add the fresh strawberries, maple syrup or honey, vanilla extract, and a pinch of salt. Blend again until the mixture is smooth and has a beautiful pink hue.
- Adjust Sweetness and Chill: Taste the strawberry almond milk and adjust sweetness as needed. Chill it in the refrigerator before serving. Shake well before pouring, as natural separation may occur. Serve cold for the best flavor and refreshment.
Notes
- For a smoother texture, strain the almond milk twice through the nut milk bag or fine mesh strainer.
- Adjust the sweetness based on your taste preference or omit the sweetener entirely for a natural nutty flavor.
- Add a few ice cubes to the blender when blending for an extra chilled and refreshing drink.
- Save the almond pulp to use in baking recipes or add to smoothies to avoid waste.
