Cheesecake Base:
- 16 ounces cream cheese (softened)
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup sour cream
- ¼ cup all-purpose flour
Crust and Topping:
- 1½ cups Golden Oreos (crushed)
- 3 tablespoons unsalted butter (melted)
- 1 (3 oz) box strawberry gelatin powder
- ½ cup freeze-dried strawberries (crushed)
- 1½ cups white chocolate chips (optional, for coating)
Instructions
- Preheat and Prep: Preheat oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper. Mix crushed Golden Oreos with melted butter and press into pan for crust.
- Mix and Bake: Beat cream cheese and sugar, add remaining Cheesecake Base ingredients, pour over crust, and bake for 35–40 minutes until set.
- Chill and Prepare Topping: Cool, then chill cheesecake. Mix strawberries, gelatin, and Oreos for topping.
- Assemble: Cut cheesecake into chunks, coat in topping, and optionally dip in white chocolate.
