For the crust:

  • 2 cups Golden Oreos (crushed)
  • 1/4 cup unsalted butter (melted)

For the cheesecake layer:

  • 3 packages (8 oz each) cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract

For the strawberry cake layer:

  • 1 box strawberry cake mix (plus ingredients listed on box: usually eggs, oil, and water)

For the topping:

  • 1 1/2 cups crushed Golden Oreos
  • 3 tablespoons strawberry gelatin powder
  • 3 tablespoons unsalted butter (melted)
  • Whipped cream and fresh strawberries for garnish (optional)

Instructions

  1. Make the crust: In a bowl, mix crushed Golden Oreos and melted butter until well combined. Press firmly into the bottom of the springform pan. Bake for 10 minutes, then let cool.
  2. Make the cheesecake: In a large bowl, beat the cream cheese until smooth. Add sugar and mix until combined. Add eggs one at a time, mixing after each addition. Add sour cream and vanilla, and beat until smooth. Pour the cheesecake batter over the cooled crust. Wrap the bottom of the pan in foil and place it in a larger baking dish filled with about 1 inch of hot water. Bake for 55–65 minutes, or until the center is nearly set. Turn off oven and let cheesecake sit in the oven for 1 hour with the door slightly open. Remove and cool completely, then refrigerate at least 4 hours or overnight.
  3. Make the strawberry cake: Prepare the cake mix according to package directions in a 9-inch round pan. Bake and cool completely.
  4. Assemble the cake: Once both layers are chilled, remove the cheesecake from the springform pan. Place the strawberry cake layer on a serving plate, then carefully place the cheesecake layer on top.
  5. Make the crumb topping: Mix crushed Golden Oreos, strawberry gelatin powder, and melted butter until crumbly. Press or sprinkle the mixture over the top and sides of the cake. Garnish with whipped cream and fresh strawberries if desired. Chill until ready to serve.

Notes

  • For clean layers, chill each component thoroughly before stacking.
  • The crumb topping can also be made with freeze-dried strawberries for a more natural flavor and color.
