Description

Strawberry Shortcake Sushi Roll is a delightful, no-bake dessert that combines the flavors of classic strawberry shortcake with the fun presentation of sushi rolls. This easy-to-make treat features soft flour tortillas filled with a creamy vanilla and cream cheese mixture, fresh strawberries, and crunchy cookie crumbs, rolled tightly and sliced into bite-sized pieces. Perfect for parties or as a unique dessert, it requires minimal prep time and no cooking.

Ingredients

Scale

Filling

  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

Roll Assembly

  • 4 large soft flour tortillas
  • 2 tablespoons strawberry jam
  • 1 1/2 cups fresh strawberries, finely chopped
  • 1/2 cup crushed shortbread cookies or pound cake crumbs
  • extra powdered sugar for dusting

Instructions

  1. Prepare the cream cheese filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped topping gently until fully combined to create a light, fluffy filling.
  2. Spread the base layers: Lay one flour tortilla flat on a clean surface and evenly spread a thin layer of strawberry jam across it to add sweetness and moisture.
  3. Add the filling and toppings: Spread about one quarter of the cream cheese mixture evenly over the tortilla. Sprinkle the finely chopped fresh strawberries and crushed shortbread cookie crumbs or pound cake crumbs evenly on top to add texture and flavor.
  4. Roll it up: Starting from one edge, carefully roll the tortilla tightly like a sushi roll. Make sure it’s firm but not squeezing out the filling. Repeat this process with the remaining tortillas and filling.
  5. Chill the rolls: Place the completed rolls seam side down on a tray or plate and refrigerate for about 20 minutes to help them firm up and make them easier to slice.
  6. Slice and serve: Using a sharp knife, slice each roll into approximately 1-inch pieces to resemble sushi. Lightly dust the tops with powdered sugar before serving for a pretty finish.

Notes

  • Use ripe, sweet strawberries for the best natural flavor and sweetness.
  • If the tortillas feel stiff or crack when rolling, warm them slightly in the microwave or on a dry skillet to make them more pliable.
  • You can substitute crushed graham crackers or vanilla wafers for the cookie crumbs to vary the texture and flavor.
  • For a dairy-free version, consider using dairy-free cream cheese and whipped topping alternatives.
