- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tsp water
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press mixture into the pan, bake for 10 minutes, then set aside to cool.
- Make the strawberry swirl: Cook strawberries, sugar, and lemon juice in a saucepan until soft. Add cornstarch slurry, cook until thickened, puree, and let cool.
- Create the filling: Beat cream cheese and sugar, add eggs, vanilla, sour cream, and heavy cream. Pour over the crust.
- Add the swirl: Drop spoonfuls of strawberry puree on top, swirl gently with a knife.
- Bake: Place the pan in a water bath, bake for 55–65 minutes. Cool in the oven, then refrigerate for at least 4 hours.
