Ingredients

Bell Peppers:

4 large bell peppers any color,

Ground Beef Mixture:

1 lb ground beef, 1 cup cooked rice, 1 small onion finely chopped, 2 cloves garlic minced, 1 can (14.5 oz) diced tomatoes drained, 2 tablespoons tomato paste, 1 teaspoon dried Italian seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons olive oil,

Cheese Topping:

1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, 2 tablespoons fresh parsley chopped (for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the Peppers: Slice the tops off the bell peppers, remove the seeds and membranes, and place them in a baking dish. Drizzle with 1 tablespoon olive oil and bake for 10 minutes.
  3. Make the Beef Mixture: In a skillet, sauté onion and garlic, then add ground beef, diced tomatoes, tomato paste, cooked rice, Italian seasoning, salt, and pepper. Cook for 5 minutes.
  4. Stuff the Peppers: Fill each pepper with the beef mixture, top with mozzarella and Parmesan cheese.
  5. Bake: Cover the dish with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
  6. Serve: Garnish with parsley and serve warm.
