Description

Summer Berry Bliss Icebox Delight is a no-bake, layered dessert featuring a crunchy graham cracker base, creamy vanilla pudding mixed with cream cheese and whipped topping, and fresh strawberries and blueberries. Graham Cracker Layer

  • 19 oz graham crackers

Pudding Mixture

  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages vanilla instant pudding mix
  • 2 1/2 cups cold milk

Whipped Cream Layer

  • 12 oz Cool Whip or homemade whipped cream (reserve 1/2 cup for topping)

Fruit Layers

  • 3 cups fresh strawberries, sliced
  • 1 1/2 cups fresh blueberries

Topping

  • 2 oz white chocolate chips


Instructions

  1. Beat cream cheese and dry pudding mixes: In a large bowl, beat softened cream cheese and vanilla instant pudding mixes together using an electric mixer until completely blended and smooth.
  2. Gradually beat in milk: Slowly add the cold milk to the cream cheese and pudding mixture while beating continuously until fully combined and smooth.
  3. Stir in Cool Whip: Gently fold in the Cool Whip or homemade whipped cream into the pudding mixture, ensuring not to deflate the whipped topping. Reserve 1/2 cup of whipped topping for later use.
  4. Layer the dessert: In a 9×13 inch pan, spread a thin layer of the reserved Cool Whip to start. Then create alternating layers of graham crackers, the pudding mixture, and fresh sliced strawberries and blueberries. Repeat these layers until the pan is filled, ending with a layer of the pudding mixture and fruit.
  5. Refrigerate: Cover the dessert and chill it in the refrigerator for at least 4 hours or overnight. This resting time allows the graham crackers to soften and the flavors to meld.
  6. Drizzle with white chocolate: Before serving, gently melt the white chocolate chips in a microwave or double boiler. Drizzle the melted white chocolate evenly over the top of the dessert for a beautiful finishing touch.
