Ingredients
Scale
Cheesecake Mixture
- 8 oz Cream Cheese (Full-fat, softened at room temperature)
- 1/2 cup Powdered Sugar (or honey/agave syrup as alternatives)
- 1 tsp Vanilla Extract (pure for best flavor)
- 1 cup Fresh Strawberries (half pureed, half chopped; blueberries or raspberries can be swapped)
- 1 cup Whipped Cream (store-bought or homemade)
Assembly
- 6 Ice Cream Cones (standard or waffle cones)
- 1 cup Crushed Graham Crackers (pre-crushed or freshly crushed)
- Extra fresh strawberries (for topping, optional)
Instructions
- Soften Cream Cheese: Leave the cream cheese out at room temperature for about 30 minutes until it becomes soft and easy to mix.
- Make Cheesecake Base: In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy without lumps.
- Add Strawberries: Puree half of the fresh strawberries until smooth using a blender or food processor. Chop the remaining strawberries into small pieces. Gently fold both the strawberry puree and chopped strawberries into the cheesecake mixture to combine evenly.
- Prepare Cones for Filling: Place the ice cream cones upright in a muffin tin or similar holder to keep them stable and avoid spills while filling.
- Fill the Cones: Generously spoon the cheesecake mixture into each cone, filling them almost to the top but leaving some space for the toppings.
- Add Toppings and Chill: Sprinkle crushed graham crackers and extra chopped strawberry pieces on top of each filled cone. Place the cones in the refrigerator to chill for about 30 minutes to firm up before serving.
Notes
- Softening the cream cheese properly ensures a creamy and lump-free cheesecake filling.
- Use room temperature ingredients for easier mixing and better texture.
- Substitute fresh strawberries with blueberries or raspberries for a different berry flavor.
- Waffle cones add extra crunch and flavor, but standard cones also work well.
- Make sure to chill the cones to help the filling set, making them easier to eat.
- These cones are best served chilled and consumed within the same day for optimal freshness.
