  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks (canned or fresh)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced

For the sauce:

  • ½ cup sugar
  • ¼ cup ketchup
  • â…“ cup rice vinegar or white vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Coat the chicken: Toss chicken in cornstarch, then dip in beaten eggs.
  2. Fry the chicken: Fry the coated chicken until golden and cooked through.
  3. Prepare the stir-fry: Sauté garlic, bell peppers, and pineapple in oil.
  4. Make the sauce: Combine sugar, ketchup, vinegar, and soy sauce. Add cornstarch slurry and cook until thickened.
  5. Combine and serve: Toss fried chicken in the sauce and serve over rice.
