Scale
For the blackberry filling:
- 4 cups fresh or frozen blackberries
- 1 cup granulated sugar (divided)
- 1 tablespoon lemon juice
For the cobbler topping:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
For serving:
- Vanilla ice cream or whipped cream (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare the blackberry filling: In a medium bowl, toss the blackberries with 1/2 cup of sugar and lemon juice. Set aside.
- Make the cobbler topping: In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk until just combined, then mix in the melted butter until smooth.
- Assemble the cobbler: Pour the batter into a greased 9×9-inch baking dish. Spoon the sugared blackberries evenly over the batter (do not stir).
- Bake: Bake for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted into the cake portion comes out clean.
- Serve: Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream if desired.
Notes
- If using frozen blackberries, do not thaw them first to avoid excess liquid.
- You can substitute raspberries or blueberries for a mixed berry cobbler.
- Adjust sugar based on the sweetness of your berries.
