Sweet Potato Layer:

Egg Mixture:
- 4 large eggs
- 1 cup milk (dairy or non-dairy)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground nutmeg (optional)
Cheese Layer:
- 1 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- Sauté Vegetables: In a skillet, sauté onion in olive oil until soft. Add garlic and spinach; cook until spinach wilts.
- Prepare Egg Mixture: Whisk together eggs, milk, salt, pepper, and nutmeg in a bowl.
- Layer Ingredients: Layer sweet potatoes, spinach mixture, and cheese in the baking dish. Repeat the layers.
- Add Egg Mixture: Pour the egg mixture over the layers and sprinkle with Parmesan cheese.
- Bake: Cover with foil and bake for 30 minutes. Uncover and bake for another 15-20 minutes until set.
- Rest and Serve: Let it rest for 5-10 minutes before slicing and serving.
