Description

This Sweet Potato & Spinach Bake is a delightful and nutritious dish perfect for any meal of the day. Layers of thinly sliced sweet potatoes, sautéed spinach, and a cheesy egg mixture come together to create a satisfying and flavorful bake.

Sweet Potato Layer:

  • 2 medium sweet potatoes, peeled and thinly sliced

Spinach Layer:

  • 3 cups fresh spinach, chopped
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil

Egg Mixture:

  • 4 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg (optional)

Cheese Layer:

  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. Sauté Vegetables: In a skillet, sauté onion in olive oil until soft. Add garlic and spinach; cook until spinach wilts.
  3. Prepare Egg Mixture: Whisk together eggs, milk, salt, pepper, and nutmeg in a bowl.
  4. Layer Ingredients: Layer sweet potatoes, spinach mixture, and cheese in the baking dish. Repeat the layers.
  5. Add Egg Mixture: Pour the egg mixture over the layers and sprinkle with Parmesan cheese.
  6. Bake: Cover with foil and bake for 30 minutes. Uncover and bake for another 15-20 minutes until set.
  7. Rest and Serve: Let it rest for 5-10 minutes before slicing and serving.
