Tater Tots:
- 1 (32 oz) bag frozen tater tots
Seasoned Beef:
- 1 lb ground beef
- 1 tbsp taco seasoning
- 1/4 cup water
Toppings:
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup sliced green onions
- 1 jalapeño, sliced (optional)
- 1/4 cup sour cream
- 1/4 cup guacamole
- 2 tbsp chopped cilantro (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F and spread the tater tots on a baking sheet. Bake for 25–30 minutes.
- Cook the beef: Brown ground beef in a skillet, drain excess grease, then add taco seasoning and water. Simmer until thickened.
- Assemble: Top baked tater tots with beef, beans, cheeses, tomatoes, olives, and jalapeños. Bake until cheese melts.
- Finish: Sprinkle with green onions and cilantro. Serve with sour cream and guacamole.
Notes
- For a vegetarian version, skip the beef and double the beans or add sautéed veggies.
- Best enjoyed immediately while hot and crispy.
