Description

Tater Tots:

  • 1 (32 oz) bag frozen tater tots

Seasoned Beef:

  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 1/4 cup water

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green onions
  • 1 jalapeño, sliced (optional)
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 2 tbsp chopped cilantro (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F and spread the tater tots on a baking sheet. Bake for 25–30 minutes.
  2. Cook the beef: Brown ground beef in a skillet, drain excess grease, then add taco seasoning and water. Simmer until thickened.
  3. Assemble: Top baked tater tots with beef, beans, cheeses, tomatoes, olives, and jalapeños. Bake until cheese melts.
  4. Finish: Sprinkle with green onions and cilantro. Serve with sour cream and guacamole.

Notes

  • For a vegetarian version, skip the beef and double the beans or add sautéed veggies.
