Description

This Taco Casserole is a delicious and easy-to-make dish that combines all the flavors of a classic taco in a comforting baked casserole. Layers of seasoned ground beef, beans, corn, and cheese are topped with crunchy tortilla chips and baked to perfection. Ground Beef Mixture:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 (1 oz) packet taco seasoning
  • 1/4 cup water
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 cup frozen corn (thawed)
  • 1 (10 oz) can diced tomatoes with green chiles (drained)

Assembly:

  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • Sliced green onions, diced tomatoes, and chopped cilantro for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: Heat olive oil in a skillet and cook onion, garlic, and beef. Add taco seasoning, water, black beans, corn, and tomatoes.
  3. Layer Casserole: Spread half the tortilla chips in a baking dish. Add half the meat mixture and cheese. Repeat layers.
  4. Bake: Bake for 15–20 minutes until cheese is melted. Let sit for 5 minutes before serving. Top with sour cream, green onions, tomatoes, and cilantro.

Notes

  • Swap beef for ground turkey or make it vegetarian by omitting meat and doubling the beans.
