Ground Beef Mixture:
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 (1 oz) packet taco seasoning
- 1/4 cup water
- 1 (15 oz) can black beans (drained and rinsed)
- 1 cup frozen corn (thawed)
- 1 (10 oz) can diced tomatoes with green chiles (drained)
Assembly:
- 2 cups crushed tortilla chips
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- Sliced green onions, diced tomatoes, and chopped cilantro for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook Ground Beef: Heat olive oil in a skillet and cook onion, garlic, and beef. Add taco seasoning, water, black beans, corn, and tomatoes.
- Layer Casserole: Spread half the tortilla chips in a baking dish. Add half the meat mixture and cheese. Repeat layers.
- Bake: Bake for 15–20 minutes until cheese is melted. Let sit for 5 minutes before serving. Top with sour cream, green onions, tomatoes, and cilantro.
Notes
- Swap beef for ground turkey or make it vegetarian by omitting meat and doubling the beans.
