Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained

Additional Ingredients:

  • 2 cups shredded cheddar cheese
  • 6 small flour or corn tortillas
  • 1 cup salsa
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook Ground Beef: In a skillet, cook ground beef, onion, and garlic until beef is browned. Drain excess grease, then add taco seasoning and water. Cook until thickened. Stir in black beans and Rotel tomatoes.
  3. Layer Casserole: Place tortillas in the baking dish, then layer with beef mixture and cheese. Repeat layers, ending with cheese on top.
  4. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is melted.
  5. Serve: Let rest, then top with salsa, sour cream, and cilantro before serving.
