- 1/2 lb ground breakfast sausage or ground beef
- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp black pepper

- 1 tbsp olive oil
- 4 large flour tortillas

Instructions
- Cook the Sausage: In a large skillet over medium heat, cook the sausage until browned, breaking it apart as it cooks. Set aside.
- Prepare the Egg Mixture: Whisk together eggs, milk, garlic powder, chili powder, salt, and pepper. Scramble in the same skillet until cooked. Remove from heat.
- Combine Ingredients: Stir in cooked sausage, red bell pepper, green onions, and cheeses until well mixed.
- Assemble the Roll Ups: Warm tortillas and spoon the filling onto each. Roll up tightly like a burrito.
- Serve: Slice into pinwheels or serve whole. Enjoy with sour cream or salsa.
