Instructions
- Prep Ingredients: Peel the tangerines and separate them into individual segments. Peel the zucchini and cut it into 1/2-inch slices to prepare for freezing.
- Freeze: Arrange the tangerine segments and zucchini slices in a single layer on a baking sheet. Place the baking sheet in the freezer and freeze for 4 hours or until the pieces are completely solid.
- Process Base: Transfer the frozen tangerine and zucchini pieces into a food processor. Pulse until the mixture is crumbly, scraping down the sides as necessary to ensure even processing.
- Blend to Creaminess: Add the coconut milk, maple syrup, and vanilla extract to the food processor. Optionally, add some orange zest to enhance the citrus flavor. Blend until the mixture becomes thick and smooth, adding more coconut milk if needed to reach a creamy texture.
- Taste & Adjust: Sample the mixture and add more maple syrup or sweetener as desired to achieve your preferred sweetness.
- Freeze: Spoon the creamy mixture into popsicle molds. Place the molds in the freezer and freeze for at least 4 hours to solidify.
- Serve: Remove the popsicles from the molds carefully and enjoy immediately. These popsicles are best served cold and fresh.
