Teryaki Sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 1 tablespoon honey
- 1/2 teaspoon ground ginger
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Garnish:
- 2 green onions, sliced
- Sesame seeds (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Make the sauce: In a saucepan, combine soy sauce, water, brown sugar, honey, ginger, and garlic. Simmer and thicken with cornstarch mixture.
- Combine ingredients: Mix rice, chicken, vegetables, and teriyaki sauce in a bowl.
- Bake: Transfer mixture to baking dish and bake for 20–25 minutes.
- Garnish: Top with green onions and sesame seeds before serving.
Notes
- For added flavor, use grilled or rotisserie chicken.
- You can substitute frozen vegetables with fresh broccoli, carrots, or bell peppers.
