Chicken Stir Fry:
- 1 lb boneless skinless chicken breast, thinly sliced
- 2 tbsp vegetable oil
Vegetables:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small carrot, julienned
- 1 small zucchini, sliced
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
Sauce:
- 1/4 cup low-sodium soy sauce
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp chili flakes (optional for heat)
- juice of 1 lime
- 1/4 cup fresh basil leaves
Serving:
- cooked jasmine rice for serving
Instructions
- Cook Chicken: Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add chicken slices and stir-fry for 4–5 minutes until cooked through. Remove chicken and set aside.
- Stir-Fry Vegetables: Add the remaining oil to the wok. Stir-fry bell peppers, carrot, zucchini, and green onions for 3–4 minutes until tender-crisp. Stir in garlic and ginger and cook for 30 seconds until fragrant.
- Combine: Return chicken to the wok. Whisk together soy sauce, fish sauce, oyster sauce, brown sugar, and chili flakes. Pour the sauce over the chicken and vegetables. Cook for 2–3 minutes until heated through.
- Finish: Remove from heat, squeeze lime juice over the top, and stir in fresh basil leaves. Serve hot over jasmine rice.
Notes
- For a spicier version, add Thai bird’s eye chilies or extra chili flakes.
- You can substitute chicken with shrimp, beef, or tofu.
