Ingredients
English Muffins:
2 English muffins, split and toasted
Tuna Mixture:
1 (5-ounce) can tuna, drained, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1/4 cup finely diced celery, 1/4 cup finely diced red onion, salt and black pepper to taste
Additional Ingredients:
4 slices tomato, 4 slices cheddar or Swiss cheese, chopped fresh parsley for garnish
Instructions
- Preheat broiler: Preheat broiler on high.
- Prepare Tuna Mixture: In a medium bowl, combine tuna, mayonnaise, Dijon mustard, celery, red onion, salt, and pepper. Stir until well mixed.
- Assemble Muffin Stacks: Place toasted English muffin halves on a baking sheet. Top each half with a tomato slice, then divide tuna mixture evenly over tomatoes. Lay a slice of cheese over each stack.
- Broil: Broil for 2 to 3 minutes, or until cheese is melted and bubbly.
- Garnish and Serve: Garnish with fresh parsley and serve hot.
Notes
- For extra crunch, sprinkle a little panko breadcrumb on top before broiling.
- You can use whole grain or sourdough English muffins for added flavor.
