Description
Tomato Bruschetta is a classic Italian appetizer featuring a fresh, flavorful tomato mixture seasoned with garlic, red onion, basil, and balsamic vinegar, served atop toasted slices of baguette or ciabatta bread. This easy-to-make dish is perfect for parties, light lunches, or as a delicious starter to any meal.
Ingredients
Scale
For the Tomato Mixture
- ½ small red onion, finely chopped
- 8 medium tomatoes (about 500g), coarsely chopped and drained
- 2-3 garlic cloves, crushed
- 6-8 fresh basil leaves, finely chopped
- 30ml balsamic vinegar
- 60-80ml extra virgin olive oil
- Salt and freshly ground black pepper, to taste
For the Bread
- 1 baguette or ciabatta loaf, sliced
- Extra olive oil for brushing the bread
Instructions
- Prepare the Tomato Mixture: In a medium bowl, combine the coarsely chopped and drained tomatoes, finely chopped red onion, crushed garlic cloves, and chopped fresh basil leaves. Mix thoroughly to ensure even distribution of flavors.
- Add Dressing and Seasoning: Drizzle the balsamic vinegar and extra virgin olive oil over the tomato mixture. Stir well to coat all ingredients. Season with salt and freshly ground black pepper to taste. Let the mixture sit for 10-15 minutes to allow the flavors to meld and the liquid to drain slightly.
- Preheat and Prepare Bread: Preheat your oven to 375°F (190°C) or alternatively, heat a grill pan over medium heat. While heating, lightly brush both sides of each bread slice with olive oil to help achieve a golden and crispy crust.
- Toast the Bread: Place the oiled bread slices on a baking tray and toast in the oven for 8-10 minutes until they are crisp and golden. If using a grill pan, toast the bread for 1-2 minutes on each side until golden and slightly charred.
- Assemble the Bruschetta: Spoon the prepared tomato mixture generously onto each toasted bread slice, ensuring each piece is well topped with the fresh, flavorful mixture.
- Serve Immediately: Garnish with extra chopped basil leaves if desired and serve immediately to enjoy at its freshest and most flavorful.
Notes
- Make sure to drain the tomatoes well to avoid soggy bruschetta.
- Use fresh, ripe tomatoes for the best flavor.
- You can add a little crushed red pepper for a spicy kick.
- For a garlic extra punch, rub the toasted bread with a cut garlic clove before spooning the topping.
- This dish is best served fresh and not stored for too long as the bread may become soggy.
