  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 1/2 cup heavy cream or half-and-half
  • salt and black pepper to taste

For Serving:

  • grated Parmesan
  • fresh basil

Instructions

  1. Heat olive oil: In a large pot over medium heat, add the diced onion and cook until soft. Stir in garlic and cook until fragrant.
  2. Add tomatoes and broth: Pour in diced tomatoes, broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
  3. Cook tortellini: Add tortellini and cook until tender, then stir in spinach until wilted.
  4. Finish soup: Stir in cream, season with salt and pepper. Serve hot with Parmesan and basil.
