- 1 small yellow onion (diced)
- 3 garlic cloves (minced)
- 1 (14.5 oz) can diced tomatoes
- 6 cups chicken or vegetable broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 (9 oz) package refrigerated cheese tortellini
- 2 cups fresh spinach
- 1/2 cup heavy cream or half-and-half
- salt and black pepper to taste
For Serving:

Instructions
- Heat olive oil: In a large pot over medium heat, add the diced onion and cook until soft. Stir in garlic and cook until fragrant.
- Add tomatoes and broth: Pour in diced tomatoes, broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
- Cook tortellini: Add tortellini and cook until tender, then stir in spinach until wilted.
- Finish soup: Stir in cream, season with salt and pepper. Serve hot with Parmesan and basil.
