Description

Nuts:

  • 1/2 cup chopped walnuts or pecans

Other Ingredients:

  • 1/2 cup dark rum or orange juice
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup orange juice
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Prepare Fruit Mixture: Combine mixed dried fruit, candied fruits, and nuts. Soak in rum or orange juice overnight.
  2. Preheat and Prepare: Preheat oven. Grease and line cake pan with parchment paper.
  3. Make Batter: Cream butter and sugar, add eggs. Mix dry ingredients, then alternate with orange juice into butter mixture. Stir in fruit mixture and zest.
  4. Bake: Pour batter into pan and bake for 2 to 2 1/2 hours. Cool before serving.
