Egg Noodles:
- 1 (12-ounce) package egg noodles
Vegetable Mix:
- 2 tablespoons unsalted butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
Sauce:
- 1 (10.5-ounce) can cream of mushroom soup
- 1/2 cup mayonnaise
- 1/2 cup milk
Tuna Mixture:
- 1 (5-ounce) can tuna in water, drained and flaked
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the egg noodles according to package directions, then drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the frozen peas and cook for another 2 minutes.
- In a large mixing bowl, combine the cream of mushroom soup, mayonnaise, milk, salt, pepper, and garlic powder. Add the cooked onions, garlic, peas, and tuna. Stir to combine.
- Add the cooked noodles and 1 cup of the shredded cheddar cheese to the mixture and stir until evenly mixed.
- Transfer the mixture into a greased 9×13-inch baking dish. Top with the remaining 1/2 cup of cheddar cheese and optional breadcrumbs.
- Bake for 25-30 minutes, or until bubbly and golden brown on top.
- Let it cool for a few minutes before serving.
Notes
- You can add a little extra flavor by mixing in some chopped bell peppers, mushrooms, or grated Parmesan cheese.
- If you want a creamier casserole, substitute sour cream or cream cheese for the mayonnaise.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
