Egg Noodles:

  • 1 (12-ounce) package egg noodles

Vegetable Mix:

  • 2 tablespoons unsalted butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas

Sauce:

  • 1 (10.5-ounce) can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1/2 cup milk

Tuna Mixture:

  • 1 (5-ounce) can tuna in water, drained and flaked
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the egg noodles according to package directions, then drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  4. Stir in the frozen peas and cook for another 2 minutes.
  5. In a large mixing bowl, combine the cream of mushroom soup, mayonnaise, milk, salt, pepper, and garlic powder. Add the cooked onions, garlic, peas, and tuna. Stir to combine.
  6. Add the cooked noodles and 1 cup of the shredded cheddar cheese to the mixture and stir until evenly mixed.
  7. Transfer the mixture into a greased 9×13-inch baking dish. Top with the remaining 1/2 cup of cheddar cheese and optional breadcrumbs.
  8. Bake for 25-30 minutes, or until bubbly and golden brown on top.
  9. Let it cool for a few minutes before serving.

Notes

  • You can add a little extra flavor by mixing in some chopped bell peppers, mushrooms, or grated Parmesan cheese.
  • If you want a creamier casserole, substitute sour cream or cream cheese for the mayonnaise.
