For the Sausage Rolls:

  • 1 pound ground turkey
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup breadcrumbs
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg, lightly beaten
  • 2 sheets puff pastry, thawed
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten with 1 tablespoon water for egg wash
  • sesame seeds or poppy seeds, optional for topping

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the filling: In a large bowl, combine the ground turkey, cranberries, breadcrumbs, onion, garlic, sage, parsley, thyme, salt, pepper, and beaten egg. Mix well.
  3. Prepare the pastry: Roll out the puff pastry sheets on a floured surface. Spread Dijon mustard down the center of each sheet.
  4. Assemble the rolls: Divide the turkey mixture into two portions and form each into a log down the center of the pastry sheets. Fold the pastry over the filling, seal the edges, brush with egg wash, and sprinkle with seeds.
  5. Bake: Cut the rolls, place on the baking sheet, and bake for 25-30 minutes until golden brown.
  6. Serve: Serve warm with cranberry sauce if desired.
