For the Sausage Rolls:
- 1 pound ground turkey
- 1/2 cup dried cranberries, chopped
- 1/2 cup breadcrumbs
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, lightly beaten
- 2 sheets puff pastry, thawed
- 1 tablespoon Dijon mustard
- 1 egg, beaten with 1 tablespoon water for egg wash
- sesame seeds or poppy seeds, optional for topping
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix the filling: In a large bowl, combine the ground turkey, cranberries, breadcrumbs, onion, garlic, sage, parsley, thyme, salt, pepper, and beaten egg. Mix well.
- Prepare the pastry: Roll out the puff pastry sheets on a floured surface. Spread Dijon mustard down the center of each sheet.
- Assemble the rolls: Divide the turkey mixture into two portions and form each into a log down the center of the pastry sheets. Fold the pastry over the filling, seal the edges, brush with egg wash, and sprinkle with seeds.
- Bake: Cut the rolls, place on the baking sheet, and bake for 25-30 minutes until golden brown.
- Serve: Serve warm with cranberry sauce if desired.
