- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (28-ounce) can crushed tomatoes
- 1 (6-ounce) can tomato paste
- 1 cup low-sodium chicken broth
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional toppings: shredded cheese, sour cream, chopped green onions, avocado
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook until browned and cooked through.
- Add onion, garlic, and bell pepper and cook until softened.
- Stir in tomato paste and cook briefly. Add beans, crushed tomatoes, broth, spices, and seasonings.
- Bring to a boil, then simmer for 30–35 minutes. Adjust seasoning, if needed.
- Serve hot with desired toppings.
