  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the Asparagus:

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • juice of 1/2 lemon
  • 2 tablespoons chopped fresh cilantro or parsley (optional)

Instructions

  1. Prepare the Chicken: In a bowl, toss the chicken with turmeric, cumin, garlic powder, salt, and pepper until evenly coated.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden and cooked through. Remove chicken and set aside.
  3. Sauté the Asparagus: In the same skillet, add the remaining tablespoon of oil and the asparagus. Sauté for 3–4 minutes, or until tender-crisp.
  4. Combine and Serve: Return the chicken to the skillet, toss with the asparagus. Squeeze lemon juice over the top and stir to combine. Garnish with fresh herbs if desired and serve warm.
