Pasta:

  • 12 oz penne or fettuccine pasta

Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 small yellow onion (diced)
  • 1½ cups cherry tomatoes (halved)
  • 1 cup sun-dried tomatoes in oil (drained and chopped)
  • 5 oz baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup reserved pasta water
  • Chopped fresh basil for garnish

Instructions

  1. Cook the pasta: Boil salted water and cook the pasta until al dente. Reserve ¼ cup of pasta water, drain, and set aside.
  2. Prepare the sauce: Sauté garlic and onion in olive oil until soft. Add cherry tomatoes, sun-dried tomatoes, and cook until softened. Add spinach, heavy cream, Parmesan, seasonings, and simmer.
  3. Combine: Toss in the cooked pasta and reserved water. Heat through and coat well. Garnish with basil.

Notes

  • You can add grilled chicken, shrimp, or sausage for extra protein.
  • Substitute coconut cream for a dairy-free version, and use gluten-free pasta if needed.
