Pasta:
- 12 oz penne or fettuccine pasta
Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 small yellow onion (diced)
- 1½ cups cherry tomatoes (halved)
- 1 cup sun-dried tomatoes in oil (drained and chopped)
- 5 oz baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- ¼ cup reserved pasta water
- Chopped fresh basil for garnish
Instructions
- Cook the pasta: Boil salted water and cook the pasta until al dente. Reserve ¼ cup of pasta water, drain, and set aside.
- Prepare the sauce: Sauté garlic and onion in olive oil until soft. Add cherry tomatoes, sun-dried tomatoes, and cook until softened. Add spinach, heavy cream, Parmesan, seasonings, and simmer.
- Combine: Toss in the cooked pasta and reserved water. Heat through and coat well. Garnish with basil.

- You can add grilled chicken, shrimp, or sausage for extra protein.
- Substitute coconut cream for a dairy-free version, and use gluten-free pasta if needed.
