- 1 (10 oz) can diced tomatoes with green chilies (drained)
- 1/2 cup black beans (optional)
- 1 cup frozen corn (thawed)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- Salt and pepper to taste

- Crushed tortilla chips or corn chips

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Sauté onion and beef: In a skillet, sauté the onion, then add the ground beef, cook until browned, and mix in taco seasoning and water.
- Combine ingredients: Add rice, tomatoes, black beans, corn, garlic powder, sour cream, and half of each cheese. Mix well and adjust seasoning.
- Layer and bake: Spread the mixture in the baking dish, top with remaining cheese, bake, add crushed chips, and bake until golden.
