Description

This Vegan African Peanut Soup is a creamy, comforting dish that combines sweet potatoes, peanut butter, and vibrant spices for a rich and satisfying meal. Packed with fragrant ginger, garlic, and nutrient-dense chard, it offers a perfect balance of sweet, savory, and slightly spicy flavors in every spoonful.

Ingredients

Scale

Vegetables

  • 2 large Sweet Potatoes (diced)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 inch Fresh Ginger (grated)
  • 2 cups Chard (chopped)

Liquids & Sauces

  • 4 cups Vegetable Stock (low-sodium preferred)
  • 1 cup Tomato Sauce
  • 1 cup Peanut Butter

Spices & Seasonings

  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Cinnamon (adjust to taste)
  • 1 teaspoon Turmeric
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Sauté Aromatics: Begin by heating a splash of vegetable stock in a large pot over medium heat. Add the chopped onions and sauté until they’re translucent, about 5 minutes.
  2. Add Garlic and Ginger: Incorporate the minced garlic and freshly grated ginger into the pot. Sauté for another minute, stirring constantly to release their fragrant oils without burning.
  3. Cook Sweet Potatoes: Stir in the diced sweet potatoes, adding more vegetable stock if necessary to prevent sticking. Cook for about 2-3 minutes until the potatoes begin to soften slightly.
  4. Add Remaining Ingredients and Simmer: Add the creamy peanut butter, the remaining vegetable stock, tomato sauce, ground cumin, coriander, cinnamon, turmeric, and season with salt and pepper. Cover the pot and cook for about 10 minutes, until the sweet potatoes are tender.
  5. Blend Soup: Using an immersion blender, blend part of the soup for a delightful creamy texture, ensuring to keep some potato chunks for a hearty bite.
  6. Add Greens and Finish Cooking: Stir in the chopped chard and let the soup simmer for a few more minutes until the greens are tender. Serve hot, optionally topped with whole peanuts for added crunch.

Notes

  • Adjust the cinnamon amount to your taste for a subtle warmth or more pronounced flavor.
  • Use low-sodium vegetable stock to better control the saltiness of the soup.
  • For extra texture, top the soup with roasted peanuts or crushed red pepper flakes.
  • This soup can be stored in the refrigerator for up to 4 days and reheated gently.
  • For a thinner consistency, add more vegetable stock or water while cooking or when reheating.
