Description

This Vegan French Onion Shepherd’s Pie with Lentils & Cauliflower Potato Mash is a hearty and flavorful plant-based twist on a classic comfort food. Caramelized onions, lentils, and a creamy cauliflower-potato mash come together in a delicious and satisfying dish.

For the French Onion Lentil Filling:

  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup brown or green lentils, rinsed
  • 3 cups vegetable broth
  • 1 tablespoon soy sauce or tamari

For the Cauliflower Potato Mash:

  • 2 medium russet potatoes, peeled and diced
  • 2 cups cauliflower florets
  • 2 tablespoons olive oil or vegan butter
  • 1/4 cup unsweetened plant-based milk
  • Salt and pepper to taste

Instructions

  1. French Onion Lentil Filling: In a large skillet, heat olive oil and caramelize onions. Add garlic, balsamic vinegar, tomato paste, thyme, rosemary, salt, pepper. Stir in lentils, broth, soy sauce, simmer until thickened.
  2. Cauliflower Potato Mash: Boil potatoes and cauliflower until tender. Mash with oil, milk, salt, pepper until creamy.
  3. Preheat oven. Spread lentil filling in a dish, top with mash. Bake until golden. Rest before serving.
