For the French Onion Lentil Filling:
- 2 tablespoons olive oil
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon tomato paste
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
- 1/2 teaspoon rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup brown or green lentils, rinsed
- 3 cups vegetable broth
- 1 tablespoon soy sauce or tamari
For the Cauliflower Potato Mash:
- 2 medium russet potatoes, peeled and diced
- 2 cups cauliflower florets
- 2 tablespoons olive oil or vegan butter
- 1/4 cup unsweetened plant-based milk
- Salt and pepper to taste
Instructions
- French Onion Lentil Filling: In a large skillet, heat olive oil and caramelize onions. Add garlic, balsamic vinegar, tomato paste, thyme, rosemary, salt, pepper. Stir in lentils, broth, soy sauce, simmer until thickened.
- Cauliflower Potato Mash: Boil potatoes and cauliflower until tender. Mash with oil, milk, salt, pepper until creamy.
- Preheat oven. Spread lentil filling in a dish, top with mash. Bake until golden. Rest before serving.
