Watermelon Salad:
- 4 cups seedless watermelon, cubed
- 1 cup cucumber, sliced and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 tablespoons chopped fresh mint
Dressing:
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the watermelon, cucumber, red onion, and mint. Drizzle with olive oil and lime juice.
- Gently toss to coat all ingredients.
- Sprinkle crumbled feta over the top and season with salt and pepper to taste.
- Serve immediately or chill for 15–20 minutes before serving.
