Ingredients
Scale
Dry Ingredients:
- 2 ½ cups cake flour (sifted)
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
Wet Ingredients:
- 1 cup unsalted butter (softened)
- 1 ¾ cups granulated sugar
- 5 large egg whites (room temperature)
- 1 tablespoon vanilla extract
- 1 cup whole milk (room temperature)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together cake flour, baking powder, and salt; set aside.
- Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
- Add Egg Whites and Vanilla: Add egg whites one at a time, beating well after each addition. Mix in vanilla extract.
- Combine Dry and Wet Ingredients: Alternately add the flour mixture and milk to the wet ingredients, beginning and ending with the flour. Mix until just combined—do not overmix.
- Bake: Divide batter between pans, smooth tops, and bake for 25–30 minutes until a toothpick inserted into the center comes out clean.
- Cool and Frost: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Notes
- For extra white color and fluffiness, use clear vanilla extract.
- Be sure to beat the egg whites gently to keep the texture tender.
- Pair with buttercream, whipped cream, or fruit fillings.
