  • 1 cup uncooked wild rice blend

For the Hotdish:

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ½ cup slivered almonds or French fried onions (optional topping)

Instructions

  1. Cook the Wild Rice: Prepare the wild rice blend according to package instructions. Set aside.
  2. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  3. Sauté Vegetables and Meat: In a skillet, melt butter and cook onion, celery, and carrot until softened. Add garlic, then brown the ground beef or turkey. Drain excess grease and stir in thyme, salt, and pepper.
  4. Combine Ingredients: In a large bowl, mix cooked rice, meat and vegetable mixture, cream of mushroom soup, sour cream, cheddar cheese, and milk until well combined.
  5. Assemble and Bake: Spread the mixture in the baking dish. Top with almonds or onions. Bake uncovered for 30–35 minutes until bubbly. Let rest before serving.
