For the Wild Rice:
- 1 cup uncooked wild rice blend
For the Hotdish:
- 2 tablespoons butter
- 1 small onion, chopped
- 2 ribs celery, chopped
- 1 carrot, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 (10.5-ounce) can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup milk
- ½ cup slivered almonds or French fried onions (optional topping)
Instructions
- Cook the Wild Rice: Prepare the wild rice blend according to package instructions. Set aside.
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Sauté Vegetables and Meat: In a skillet, melt butter and cook onion, celery, and carrot until softened. Add garlic, then brown the ground beef or turkey. Drain excess grease and stir in thyme, salt, and pepper.
- Combine Ingredients: In a large bowl, mix cooked rice, meat and vegetable mixture, cream of mushroom soup, sour cream, cheddar cheese, and milk until well combined.
- Assemble and Bake: Spread the mixture in the baking dish. Top with almonds or onions. Bake uncovered for 30–35 minutes until bubbly. Let rest before serving.
Notes
- This hotdish can be assembled ahead and refrigerated before baking. Customize with sautéed mushrooms or peas for variation.
