Ingredients for the Shrimp:

  • 1 pound shrimp, peeled and deveined

  • ½ teaspoon garlic powder

Additional Ingredients:

  • 2 cups cooked white or brown rice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup corn (fresh, canned, or thawed frozen)
  • ¼ cup red onion, finely diced
  • Fresh cilantro for garnish
  • Cilantro Lime Sauce:

    • ½ cup Greek yogurt or sour cream
    • ½ cup fresh cilantro, chopped
    • 2 tablespoons lime juice
    • 1 clove garlic, minced
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 1–2 teaspoons water to thin, if needed

Instructions

  1. Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Cook in a skillet until pink and opaque.
  2. Make the Cilantro Lime Sauce: Blend all sauce ingredients until smooth. Adjust seasoning and consistency.
  3. Assemble the Bowls: Divide rice into bowls. Top with shrimp, avocado, tomatoes, corn, and red onion. Drizzle with sauce and garnish with cilantro. Serve.
