Zucchini Layers:
- 3 medium zucchinis sliced lengthwise into thin strips

- 1 (24-ounce) jar marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cheese Layers:
- 1 (15-ounce) container ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Optional Garnish:
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Prepare Zucchini: Lay zucchini slices on paper towels, sprinkle with salt, let sit for 10 minutes, then pat dry.
- Make Meat Sauce: Brown ground beef and onion in olive oil. Add garlic, marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Prepare Cheese Mixture: Combine ricotta, egg, and Parmesan in a bowl.
- Assemble Lasagna: Layer meat sauce, zucchini, ricotta mixture, and mozzarella in the baking dish. Repeat layers, finishing with mozzarella on top.
- Bake: Cover with foil, bake for 30 minutes, then uncover and bake for an additional 10–15 minutes until bubbly.
- Rest and Serve: Let the lasagna rest for 10 minutes before slicing. Garnish with fresh basil if desired.

- For a firmer lasagna, grill or roast zucchini slices before layering to reduce moisture.
