Description

Cream Cheese Frosting:

  • 8 ounces cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Mix wet ingredients: In a large mixing bowl, beat the butter, oil, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
  4. Combine and bake: Gradually mix in the dry ingredients just until combined. Fold in grated zucchini and nuts if using. Spread the batter into the pan and bake for 35–40 minutes until a toothpick comes out clean. Let cool.
  5. Make frosting: Beat together cream cheese and butter until smooth. Add powdered sugar and vanilla extract, beat until fluffy. Spread frosting over the cooled cake.
