Description

A quick and flavorful Doritos Chicken Taco Salad that combines seasoned sautéed chicken with fresh romaine lettuce, corn, cherry tomatoes, cheddar cheese, and green onions, topped with crunchy Doritos chips and your choice of ranch or Catalina dressing. Perfect for a satisfying and easy-to-make meal in just 25 minutes.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken breasts, cut into small cubes
  • 3 tablespoons low sodium taco seasoning
  • 1/2 cup water
  • Salt and pepper, to taste
  • Cooking spray

Salad Base

  • Romaine lettuce, freshly chopped
  • Cooked corn (about 1 cup)
  • Sliced cherry tomatoes (about 1 cup)
  • Shredded cheddar cheese (1 cup)
  • Sliced green onions (1/2 cup)
  • Fresh cilantro, chopped (1/4 cup)

Toppings and Dressing

  • 1 bag Doritos Nacho Cheese Chips
  • 1 bottle Ranch Dressing or 1 bottle Catalina Dressing (choose your preference)

Instructions

  1. Prepare the chicken: Heat a large non-stick skillet over medium-high heat and spray it with cooking spray. Add the cubed chicken pieces, season with salt and pepper, and cook while stirring for about 10 minutes until the chicken is cooked through in the center.
  2. Season and simmer: Sprinkle the taco seasoning evenly over the cooked chicken, then pour 1/2 cup of water on top. Stir to combine, bring the mixture to a boil, then reduce the heat to low and let it simmer for 5 to 8 minutes until the flavors meld and the sauce thickens slightly.
  3. Assemble the salad: On six plates, lay down a bed of freshly chopped romaine lettuce. Evenly distribute the cooked taco chicken over the lettuce. Add cooked corn, sliced cherry tomatoes, shredded cheddar cheese, sliced green onions, and freshly chopped cilantro according to your preference.
  4. Add toppings and dressing: Crush the Doritos Nacho Cheese chips and sprinkle them generously over each salad. Drizzle with ranch or Catalina dressing as desired, then serve immediately and enjoy!

Notes

  • For added spice, consider adding sliced jalapeños or a dash of hot sauce.
  • If you prefer, substitute chicken breasts with chicken thighs for a juicier texture.
  • Cook the corn fresh by boiling or grilling for enhanced flavor.
  • Use gluten-free Doritos and toppings to make this recipe gluten-free.
  • This salad can be meal prepped by keeping the chicken and salad components separate until serving.
