Description

These Easy Keto Cinnamon Rolls are a low-carb, gluten-free twist on the classic sweet treat. Made with almond and coconut flours and sweetened with Swerve, these cinnamon rolls deliver rich flavor and a soft, fluffy texture without the carbs. Perfect for a keto-friendly breakfast or dessert, they’re quick to prepare and bake in just under 30 minutes.

Ingredients

Scale

Dry Ingredients

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1/4 cup Swerve sweetener
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup butter, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk

Filling

  • 1 tablespoon cinnamon
  • 1/4 cup Swerve sweetener (for filling)
  • 2 tablespoons butter (for filling, melted)

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix dry ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, Swerve sweetener, and salt. Stir well to evenly distribute all dry ingredients.
  3. Combine wet ingredients: In a separate bowl, whisk together the melted butter, eggs, and unsweetened almond milk until fully incorporated. This mixture will add moisture and bind the dough.
  4. Form dough: Add the wet ingredients to the dry ingredients. Mix thoroughly until a dough forms. It should be soft but manageable for rolling.
  5. Roll out dough: Place the dough on a sheet of parchment paper and roll into a rectangular shape approximately 8×10 inches, ensuring an even thickness for uniform baking.
  6. Prepare and spread filling: Melt the 2 tablespoons of butter for the filling. Mix in the cinnamon and 1/4 cup Swerve sweetener. Spread the cinnamon-sweetener mixture evenly over the rolled-out dough.
  7. Roll and slice: Starting from one of the long edges, tightly roll the dough into a log shape using the parchment paper to help. Using a sharp knife, slice the log into 8 equal rolls.
  8. Arrange and bake: Place the 8 cinnamon rolls onto the prepared baking sheet, leaving some space between each. Bake in the oven for 15-18 minutes or until the tops are golden brown and the rolls are cooked through.
  9. Cool and serve: Remove from the oven and let the cinnamon rolls cool slightly before serving. Enjoy warm for the best texture and flavor.

Notes

  • Make sure to not overmix the dough to keep the rolls tender.
  • You can substitute Swerve sweetener with another keto-friendly sweetener like erythritol, adjusting sweetness to taste.
  • For a dairy-free version, use melted coconut oil instead of butter and a plant-based milk alternative.
  • Reheat cinnamon rolls gently in the microwave or oven to enjoy them warm the next day.
