Instructions
- Preheat oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix dry ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, Swerve sweetener, and salt. Stir well to evenly distribute all dry ingredients.
- Combine wet ingredients: In a separate bowl, whisk together the melted butter, eggs, and unsweetened almond milk until fully incorporated. This mixture will add moisture and bind the dough.
- Form dough: Add the wet ingredients to the dry ingredients. Mix thoroughly until a dough forms. It should be soft but manageable for rolling.
- Roll out dough: Place the dough on a sheet of parchment paper and roll into a rectangular shape approximately 8×10 inches, ensuring an even thickness for uniform baking.
- Prepare and spread filling: Melt the 2 tablespoons of butter for the filling. Mix in the cinnamon and 1/4 cup Swerve sweetener. Spread the cinnamon-sweetener mixture evenly over the rolled-out dough.
- Roll and slice: Starting from one of the long edges, tightly roll the dough into a log shape using the parchment paper to help. Using a sharp knife, slice the log into 8 equal rolls.
- Arrange and bake: Place the 8 cinnamon rolls onto the prepared baking sheet, leaving some space between each. Bake in the oven for 15-18 minutes or until the tops are golden brown and the rolls are cooked through.
