Ingredients
Scale
Vegetables
- ½ cup chopped red bell pepper
- ½ cup chopped zucchini
- ½ cup chopped yellow squash
- ½ cup chopped red onion
- ½ cup chopped mushrooms
Other Ingredients
- 1 tablespoon olive oil
- Cooking spray
- 6 (9-inch) whole wheat tortillas
- 1 ¼ cups shredded reduced-fat sharp Cheddar cheese
Instructions
- Sauté the vegetables: Heat olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
- Prepare the filling: Transfer the cooked vegetables to a bowl to cool slightly and set aside.
- Assemble the quesadillas: Lightly coat the skillet with cooking spray and place one whole wheat tortilla in the pan. Sprinkle half of the tortilla evenly with shredded Cheddar cheese. Add a portion of the cooked vegetables on top of the cheese, then sprinkle more cheese over the vegetables. Place a second tortilla on top to form the quesadilla.
- Cook until golden and crispy: Cook the quesadilla for 2 to 3 minutes per side over medium heat, pressing gently with a spatula, until the tortillas are golden brown and crispy, and the cheese is melted inside.
- Serve: Remove the quesadilla from the skillet and place on a cutting board. Cut into 8 triangles and serve warm with your favorite sides or dips.
Notes
- You can customize the vegetables based on seasonal availability or your preferences.
- Using reduced-fat cheese helps keep the quesadillas lighter while still delivering rich flavor.
- If you prefer, add a dash of your favorite spices such as cumin or chili powder during sautéing for extra flavor.
- To make this recipe vegan, substitute the cheese with a plant-based alternative.
- Whole wheat tortillas add extra fiber and nutrients compared to regular flour tortillas.
