  • 6 (9-inch) whole wheat tortillas
  • 1 ¼ cups shredded reduced-fat sharp Cheddar cheese


Instructions

  1. Sauté the vegetables: Heat olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  2. Prepare the filling: Transfer the cooked vegetables to a bowl to cool slightly and set aside.
  3. Assemble the quesadillas: Lightly coat the skillet with cooking spray and place one whole wheat tortilla in the pan. Sprinkle half of the tortilla evenly with shredded Cheddar cheese.
