Smoothie Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 small to medium raw beetroot, peeled and chopped
- 2 tablespoons chia seeds
- 1/4 cup water
- 1 cup unsweetened almond milk
- 1/4 cup Greek yogurt
- 1 tablespoon honey or maple syrup (optional)
- 1 teaspoon fresh lemon juice
- 4 to 5 ice cubes (optional)
Instructions
- Soak Chia Seeds: Place chia seeds in a small bowl with 1/4 cup of water and let them soak for about 10 minutes until they become gel-like in texture.
- Prepare Fruits and Vegetables: Hull and halve the strawberries. Peel and chop the beetroot into small pieces to ensure smooth blending.
- Add Ingredients to Blender: Combine the soaked chia seeds, strawberries, chopped beetroot, unsweetened almond milk, Greek yogurt, lemon juice, and honey or maple syrup if using in a blender.
- Blend Ingredients: Start blending on low speed to break down the solids, then increase to high speed and blend for 1 to 2 minutes until the mixture is smooth and creamy.
- Add Ice (Optional): Add 4 to 5 ice cubes if you prefer a chilled smoothie, and pulse briefly until the ice is incorporated.
- Adjust and Serve: Taste the smoothie and adjust the sweetness or acidity as needed. Pour into a glass and serve immediately to enjoy its fresh flavors and vibrant color.
Notes
- Soaking chia seeds helps to improve texture and digestibility.
- Use raw beet to retain maximum nutrients and natural sweetness.
- Honey or maple syrup is optional; omit for a lower-calorie or vegan option using maple syrup.
- Adding ice cubes is optional and can be adjusted based on your desired smoothie temperature and thickness.
- Fresh lemon juice adds brightness and balances the sweetness.
